Sugary Rainbows ^-^

I woke up this morning with just one thing on my mind...cupcakes!
I love looking at them, pretty colours and soft textures and eating them of course!





I have decided I would rather enjoy having a go at making some of these little beauties!

Mint Chocolate Cupcakes:
Ingredients:
225g self raising flour
4tbsp cocoa powder
1tsp baking powder
225g caster sugar
225g unsalted butter
4 eggs
1tsp mint essence
100g choc chips

for the icing:
115g unsalted butter
225g icing sugar
1tsp mint essence
green food colouring
100g choc chips (or choc sprinkles)

Method:
Pre-heat the oven to 160 degrees.
Place the 18 cases into muffin tins.
In a bowel, sieve the flour, baking powder and the cocoa.
Beat the butter and sugar together in another bowel. Add the eggs to the sugar and butter and beat together. Add the flour mixture gradually.
Stir in the mint essence and choc chips.
Spoon the mixture into the cases and bake for about 25mins.
For the icing:
Beat together the sugar and the butter. Stir in the mint essence and just enough food colouring to turn the icing mint green.
Serves 18.

I hope they turn out alright! If I put some pictures up you can assume they went well, if not, they ended up in the bin, but Im sure they will be yummy!

  1. Oh they're too pretty. I'll be making some this weekend, I've bought a heart shaped cupcake mould so I hope it works out okay ha ha! :)
